Mediterranean Quiche


  • 2 eggs
  • 2 and 1/2 Tablespoons of ice water
  • 1 and 3/4 cup of flour
  • 1/2 teaspoon of salt
  • 10 Tablespoons of unsalted butter
  • 1/2 Tablespoon of sage
  • 1/2 Tablespoon of parsley


  • 1/4th cup onion
  • 1/2 cup of pan-seared vegan soy burger or a meat of your choice
  • 1 cup of chopped spinach
  • 1/2 cup of chopped tomato
  • 6 eggs
  • 1/2 cup of heavy whipping cream
  • 2 teaspoons of minced garlic
  • 1\2 teaspoon of pepper
  • 2 Tablespoons of feta crumbs
  • Tomato/basil goat cheese crumbs to spread on bottom of crust


Add all ingredients for crust in a large bowl and blend with mixer. Roll dough out to be 1/8 inch thick. Place dough in a buttered/floured pie pan and cut off extra. Refrigerate dough for at least an hour. Cook pie crust at 350 degrees 30 minutes.

For the filler whisk all ingredients together except meat and goat cheese, spread goat cheese and cooked meat across bottom of pie crust. Pour mixture on top and return to oven to cook until center is firm.

Serve on top of Greek salad.
